Q: What is the thickness of the 1 wide tank strap channel part # 05-01800?

It is approx. .071" thick at the flat area.

Q: What is the internal width of this part? In other words what size (width) can a piece be that is inserted into this channel?

The inside width is 1".

Q: This looks a LOT like what I need to replace rubber molding on a refrigerator dolly (hand truck with built in ratchet strap). Any ideas if its suitable for this?

It would probably be suitable for this, but we do not have specific application specs for this. You would need to measure the dolly and see if this rubber would be correct for it.
